This week at Mercer St Taproom, we’re pouring Parabola 2025 from Firestone Walker Brewing Company — one of the world’s most storied barrel-aged stouts and an absolute powerhouse of a beer.

Parabola is always a beast, but each vintage tells its own story. For the 2025 release, the beer was aged for a full year in 12-year Elijah Craig and 11-year Henry McKenna bourbon barrels. These coveted vessels layer in rich character and depth, elevating an already massive imperial stout to new heights.

Expect intense flavors of black cherry, dark chocolate, vanilla, and roasted coffee, wrapped in luxurious notes of charred oak, nougat, espresso, and cinnamon from the extended barrel aging. Full-bodied, complex, and beautifully warming at 13.8% ABV — this is a slow-sipping experience meant to be savored.
