I spent a long weekend in Charleston, a place that’s always felt really inspiring to me. Being back made me think it would be fun to share a bit of the beginning of Lucky Lab. The idea actually started while I was living in Hawaii, and eventually made its way to Charleston, where we built the very first version as a coffee truck and later, a coffee trailer.
From the start, I wanted it to feel different. Not like a typical food truck, but more like stepping into someone’s kitchen or a small cafe. Warm, thoughtful, and inviting. We were really intentional with all the little details in that first build, and that mindset has stayed with us as we’ve grown into our cafes and future builds.
Charleston played a big role in shaping that. Every time I’ve visited, I’ve been drawn to the hospitality, the pace, the charm — being near the water 🌊 — and how much people care about how a place feels.
And of course, the name came from my labs 🐶, Franklin and Paisley Mae. They were steady, charming, and at the center of my world at the time (as my dogs always are). A good reminder that we’re the lucky ones to have dogs in our lives!
Every trip, I come home a little inspired, whether it’s for a new menu, a future space, or just a fresh perspective on what we’re building.
